The Azores are a unique place, a group of islands in the mid-Atlantic, and an autonomous region of Portugal that produce 30% of Portugal's milk supply as well as internationally known cheeses. These islands of volcanic origin each have a variety of microclimates depending on soils and elevations that support an array of agricultural production. With such diversity in agriculture, it is the perfect place to learn about another culture, try delicious food, and interact with professionals in dairy and other farming systems. Students will begin learning about the Azorean agricultural system through coursework and interaction with faculty at the Universidade dos Acores (via internet) in the spring. During May, students will travel to two of the Azorean islands to see first- hand the agricultural food production systems from farm gate through processing and marketing. Students will have the opportunity to meet with farmers, processors and retailers as well as other students and faculty at the University on the island of Terceira. One and a half days will also be spent exploring historical sites in Lisbon, Portugal.
